If you are looking for a quick and easy but delicious lamb recipe to serve on a busy night, here’s one that you should try. Lamb and chickpeas with veggies and herbs. It only takes 35 minutes to prepare.

INGREDIENTS:

  • 1 Pound lamb leg, cubbed
  • Salt and Pepper to taste
  • 2 Tablespoons olive oil, divided
  • 1/4 Teaspoon red pepper flakes
  • 1/2 Teaspoon ground cumin
  • 1 Teaspoon ground coriander
  • 2 Teaspoons lemon zest
  • 2 Cloves garlic, crushed and minced
  • 1/4 Cup fresh mint, chopped
  • 30 Oz. Chickpeas, rinsed and drained
  • 1 Cup tomatoes, chopped
  • 1 Cup cucumbers, chopped
  • 1/4 Cup fresh parsley, chopped
  • 1 Tablespoon red wine vinegar
  • Yogurt

    DIRECTIONS:

    Preheat your oven 375’F.

    Add the lamb to a baking pan.

    In a bowl, mix salt, pepper, half of the oil, red pepper flakes, cumin and coriander.

    Pour into the baking pan and coat the lamb evenly with the mixture.

    Roast in the oven for 20 minutes.

    In a bowl, combine the lemon zest, garlic and mint.

    In another bowl, the remaining ingredients.

    Season with salt and pepper.

    Serve the lamb with chickpea mixture, mint mixture and yogurt.
