Easy and simple but definitely impressive—you and your family are going to savor every bite of these lamb chops with chimichurri.

INGREDIENTS

  • 2 Rack of lamb, sliced into chops
  • 2 Teaspoons freshly grated lemon zest
  • Salt and pepper to taste
  • 1/4 Cup olive oil

    Chimichurri

    • 1/4 Cup fresh mint leaves
    • 1/4 Cup olive oil
    • 2 Anchovy fillets ( packed in oil)
    • 1/4 Cup fresh parsley
    • 1 Clove garlic
    • 1/4 Cup fresh lemon juice
    • 2 Teaspoons lemon zest
    • 1/4 Cup walnuts chopped
    • 1/4 Cup olives, pitted and sliced
    • 1/2 Teaspoon red pepper flakes

      DIRECTIONS

      Preheat your grill.

      Season the lamb with lemon zest, salt and pepper.

      Drizzle with olive oil.

      Let sit while you make the chimichurri.

      In the food processor, add all the chimichurri ingredients except the olive, red pepper flakes and walnuts.

      Pulse until smooth.

      Stir in the rest of the ingredients.

      Grill the lamb 3 minutes per side.

      Let sit for 15 minutes.

      Serve with chimichurri.
