These Middle Eastern-inspired meatballs with gluten-free oats add extra health benefits to the entire dish. They are not just delicious; they are super healthy and nutritious!


 

Crispy on the outside, nice and juicy inside! Meatballs served with zesty yogurt sauce! These meatballs are perfect for a quick meal, entertaining the crowd, or a kid’s lunch boxes! Give it a try, and I’m pretty sure you’ll be delighted with the result!

INGREDIENTS:

  • 1 1/4 Pounds ground Lamb
  • 1 Egg, Extra large beaten
  • 1 Tablespoon Harissa Paste
  • 1/4 Cup Parsley, finely chopped
  • 2 Cloves garlic, minced
  • 1 Shallot, large minced
  • 1 Teaspoon sea salt
  • 1/2 Teaspoon cumin
  • 1/2 Cup gluten-free oats

    Yogurt Sauce

    • 7 Ounces greek yogurt
    • 1 Tablespoon lemon juice
    • 2 Tablespoons parsley, finely chopped
    • 1 Clove garlic, minced or thru garlic press
    • 1/4 Teaspoon sea salt

      DIRECTIONS:

      • Preheat the oven to 400′ F. In a large bowl, combine the lamb, egg, Harissa paste, parsley, garlic, shallot, salt and cumin.
      • In a food processor, pulse the oats until coarsely ground. Add to the bowl. Mix the lamb with other ingredients until loosely combined. Avoid over breaking up the meat.
      • Form the mixture into 1 1/2 Inch balls ( an ice cream scoop works well for portioning) and roll in your hands until round and smooth.
      • Arrange the balls on a parchment paper-lined baking sheet and bake in the oven until cooked through and beginning to brown on the bottom, about 25 minutes.
      • Meanwhile, in a small mixing bowl, whisk together the ingredients for the yogurt sauce.
      • Serve the meatballs warm or at room temperature alongside the yogurt sauce.
