Tired of your usual soups and want to try something different and rustic? I know the feeling and that’s why I made this fantastic barley soup! If you make it with lamb use rosemary. Make it with beef and go with thyme! The key to this recipe is good homemade bone broth. Good bone broth is essential for a great soup! Use your own homemade broth, or check out our all-natural homestyle bone broth.


 
 

INGREDIENTS:

  • 1 to 2 Pounds of lamb stew or beef stew cut into small cubes
  • 1/4 Cup avocado oil
  • 1 medium red onion chopped
  • 2 medium carrots chopped
  • 2 celery stocks chopped
  • 1 red or yellow bell pepper chopped
  • 3 cloves garlic chopped
  • 3/4 cup barley
  • 4 cups hackamore lamb or beef broth
  • 3 cups water
  • 1 tablespoon soy sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1/2 teaspoon dry rosemary if using lamb ( if you have fresh 1 tps)
  • 1/2 teaspoon dry thyme if using beef ( if using fresh 1 tps)
  • Salt and black pepper to taste
  • Fresh parsley or cilantro for garnish

    DIRECTIONS:

    • Heat the oil in a heavy bottom pot. Cook the meat until brown and the liquid from the meat is evaporated.
    • Add onions and cook until soft then add carrots, celery, bell pepper, and garlic. Cook until veggies are soft and a bit browned.
    • Add tomato paste and let it cook for a couple of minutes so it gets a nice deep aroma. Add soya sauce and Worcestershire sauce, and mix well.
    • Add bone broth, water, and barley, and bring to a boil. Add bay leaf and herb of your choice. Cook on simmer for about 20 min or until the barley is cooked and soft.
    • To serve garnish with parsley or cilantro.
