lamb, lemon, cilantro, arugula- these ingredients scream summer! It seems so natural to combine them, along with few other ingredients, to make a burger with a bright, citrusy yogurt sauce.


 

INGREDIENTS:

  • 1-1/4 Pounds of ground lamb
  • 1 Lemon
  • 2 Garlic cloves, grated
  • 1-1/2 Teaspoons ground coriander
  • 1 Teaspoon kosher salt, divided
  • 1 Teaspoon freshly ground black pepper
  • 1/4 cup packed cilantro leaves with tender steams
  • 1/2 cup whole milk Greek yogurt
  • 4 Tablespoons extra virgin olive oil
  • 4 Tablespoons unsalted butter, room temperature
  • 4 Wholewheat burger buns
  • 4 Cups baby arugula

    DIRECTIONS:

    • In a bowl mix ground lamb, zest of one lemon ( keep the lemon), grated garlic, 1 Teaspoon ground coriander, 1/2 Teaspoon salt, 1/2 Teaspoon freshly ground black pepper, and half of chopped cilantro.

    • Toss ground mixture with your hands until just combined. You don’t want to overwork it as it might get a bit tough. Divide meat into 4 equal portions and make patties.

      Yogurt Sauce

    • In separate small bowl mix yogurt, squeeze half of the lemon juice, add 1/4 Teaspoon of salt, 1/4 Teaspoon of freshly ground black pepper, remaining cilantro and 2 Tablespoons of olive oil. Mix until fully incorporated.

      Buns

    • Heat large cast iron skillet over medium heat. Spread 4 Tablespoons of butter over buns and toast until golden brown. Transfer to plates.

    • Increase heat to medium-high and add 1 Tablespoon of olive oil to a skillet.

      Cook the patties

    • Once oil begins to shimmer, start cooking the patties about 5 minutes on each side. or until instant thermometer registers 135’F for medium. Transfer to a plate and let it rest fro 5 minutes.

      Make Arugula salad

    • Place 4 Cups of baby arugula in a bowl, drizzle with one tablespoons of olive oil, and squeeze the other half of lemon juice. Season with the remaining salt and pepper and toss to combine.

      Assemble Summer Burger

    • Spread 1 Tablespoon of yogurt mixture on bottom half of each toasted bun. Top with a small handful of dressed arugula. Place patties on top of arugula. Spread 1 Tablespoon of yogurt sauce over patties and close up hamburgers.

    • Serve with the remaining arugula salad.
