Unfortunately, due to time constraints, I had to stop producing it, but I’ve had so many requests since then that I decided it’s time to share my tried-and-true recipe.
This recipe is straightforward to make, nourishing, and absolutely worth every bite. Whether you’re looking for a flavorful spread for crackers or a nutrient-rich addition to your diet, this liver pate will deliver.

Easy Homemade Liver Pate Recipe
This recipe makes about 2½ cups and is perfect for sharing or freezing for later.
INGREDIENTS:
- ½ cup + 2 tablespoons butter
- 2 cups diced yellow onion
- 2 cloves garlic, minced
- 1 tablespoon fresh sage, finely minced
- 1 tablespoon fresh oregano, finely minced
- 1 pound grass fed beef or lamb liver, diced or thinly sliced
- 2 tablespoons half and half
- 1 teaspoon real sea salt
- 1 teaspoon freshly ground allspice (use a clean mortar, put your muscle to work)
- ½ teaspoon ground pepper
INSTRUCTIONS:
1.Prep the Ingredients- Begin by dicing the onions, garlic, and herbs. Check the liver for any membranes and remove them if present.
2. Caramelize the Onions- Heat butter in a skillet over medium heat until melted, then reduce to medium-low. Add the diced onion and sauté for about 15 until deeply caramelized. Towards the end add the garlic and herbs, then continue sautéing for another couple minutes.
3. Cook the Liver- With a slotted spoon, transfer the caramelized onion mixture to a food processor. Increase the skillet heat to medium and cook the liver until it’s no longer bloody but still slightly pink in the center (just a couple of minutes). Allow it to cool slightly.
4. Blend to Perfection- Process the onion mixture until smooth. Add the liver, half and half, sea salt, allspice, and ground pepper. Blend everything into a creamy, velvety consistency.
5. Store and Chill- Line a container with plastic wrap, then pour in the pate. Smooth the top with a spatula, cover, and refrigerate until firm. Once set, you can turn the pate out onto a plate and slice it, or simply spoon it out of the container.
6. Serve and Enjoy- Pair your pate with crusty bread, crackers, or fresh vegetables like celery sticks. It’s perfect as a quick snack, flavorful breakfast spread, or an elegant appetizer for entertaining guests.
