  • 1 pound smoked summer sausage
  • 6 cups kefir
  • 5 medium golden potatoes boiled and peeled
  • 7 eggs hard-boiled and peeled
  • 2-3 medium size cucumbers
  • 10 medium radishes
  • 1/2 cup chopped fresh dill more or less to taste
  • 1/2 cup green onions more or less to taste
  • Mustard to taste (optional)
  • Salt and black pepper to taste


  • To make Okrashka, simply cut smoked summer sausage, potatoes, hard-boiled eggs, and cucumbers into small cubes. Add 10 sliced radishes, 1/2 cup of chopped fresh dill, and 1/2 cup of sliced green onions to the pot.
