It’s a great side dish for any lamb! It’s vibrant, delicious, and healthy. The combination of all ingredients makes it unique and so desirable. Give it a try and see for yourself!


 
 

INGREDIENTS:

  • 14 Oz Canned Chickpeas, rinsed and drained

SPICED YOGURT

  • 1 cup full fat greek yogurt

  • 1 tps. ground coriander

  • 1/2 tsp. ground cumin

  • Salt/black pepper

DRESSING

  • 2 Tbs. fresh lemon juice

  • 1-1/2 tsp. honey

  • 1/3 cup golden raisins

  • 1 tsp. curry powder

  • 1/4 cup olive oil

  • salt

FOR THE SALAD

  • 1 small head cauliflower about 1-1/2 Lbs.

    trimmed and cut into bite sizes, about 3-1/2 cups.

  • 2 Tbs Olive oil

  • Salt and black pepper

  • 1/4 chopped toasted almonds

  • 1/2 cup fresh mint leaves

  • Chilly Flakes to taste

DIRECTIONS:

MAKE THE SPICED YOGURT

In medium bowl combine the yogurt, cumin, coriander 1/2 tsp salt and 1/4 tsp pepper. Cover and refrigerate until ready to use.

MAKE THE DRESSING

In small bowl whisk lemon juice and honey. Add the raisins and let soak for 15 min. Remove the raisins, and add to the remaining liquid, curry powder and 1/2 tsp. salt, whisking constantly , add the olive oil in slow, steady stream.

MAKE THE SALAD

Set the oven on broil. On the large backing sheet, toss the cauliflower with the olive oil and 1/2 tsp salt & 1/2 tsp of black pepper.Roast cauliflower until golden brown about 10 min. Keep an eye on it, every broil is different. Transfer cauliflower to large bowl, add drained chickpeas. Add the dressing, toss to combine.

PUT IT ALL TOGETHER

Spread the yogurt on the large serving platter, spoon cauliflower on top of yogurt, and top with raisins, mint and chili flakes.
