This Spring Lamb stew is packed with veggies, herbs, and nutritious pasture-raised lamb! It’s cooked in its juices and brings an amazing experience to every bite you make! The stew is light, nutritious, and super easy to make!


 

The best part of the stew is that you put everything in layers in one pot, cover, cook and serve. There are no multiple cooking steps. Another thing is that you can modify it to your liking. Use any veggies, and herbs you want or have on hand.

INGREDIENTS:

  • 2 Pounds of lamb cut into cubes (shoulder, leg, ribs, neck) anything you have on hand. Meat with the bone is ideal.
  • 4 Oz olive or Avacado oil
  • 2 medium onions
  • 4 Celery stalks
  • 2 Bell peppers
  • 6 cloves garlic
  • 2 Tomatoes
  • 4 Medium potatoes Yukon works great
  • 1 Turnip (optional)
  • 1 Medium young cabbage
  • Parsley, cilantro, or dill
  • 1 Tablespoon Cumin
  • 1/2 Teaspoon Chili flakes
  • Salt and black pepper to taste

DIRECTIONS:

  • Pour oil into a heavy bottom pot. Layer the lamb on top of the oil, and season with salt and pepper.
  • Slice the onions and layer on top of the meat. Chop carrots and celery into 1.5-inch logs and layer on top of the onions, follow with chopped bell peppers and sprinkle with chopped herbs.
  • Season a little with salt, pepper, cumin, and chili flakes.
  • Peel the potatoes and turnip cut them into half and layer on top along with the garlic cloves. Follow with chopped tomatoes and more herbs. Season with salt, pepper, and spices.
  • Quater the cabbage ( we need big chunks) remove the core and layer on top of the layers so it covers everything. Season well.
  • Close with a tight lid so the steam doesn’t escape and set the pot on medium-high heat.
  • It will take about 4-5 minutes until you’ll hear the boiling/ cooking sound. As only you’ll hear the sound, reduce the heat to simmer, low.
  • Let it cook for about 2 hours. Open the pot and enjoy the aroma :)
  • Serve individually on the plate or large platter garnished with vibrant herbs. Make sure you put everything by little of it’s content and top up with that amazing juice from the bottom!
