Would you like to make burgers? Not your usual type of burgers but a different kind? How about Turkish burgers with the ground lamb?

These burgers are easy, healthy, and unique! They are so good that you will make them again and again!

Don’t get scared with the list of ingredients. You might think, oh my… I need too many ingredients, but no, you don’t.

When we use spices in cooking, every spice takes up a line to write but just a tiny bit in actual cooking!

I love cooking with spices. I think spices give “life” to the food and make food exciting, tasty, and vibrant! Spices don’t just have fantastic flavor; they also have excellent benefits for our bodies!

I remember and miss walking at Central Asia and Middle East markets between the endless rows of piled up spices. The spices’ aroma would make my head spin and think about the Great Silk Road, the cradle of the spice trade.

Cooking time: 1 hour

Ingredients:

  • 1 cup water
  • 1/4 cup bulgur
  • 2 teaspoons coriander seeds
  • 3/4 cup greek yogurt
  • 1/4 cup scallions, chopped
  • 2 tablespoons mint leaves, chopped
  • 1/4 cup parsley, chopped and divided
  • 1 teaspoon lemon zest, grated
  • 1 tablespoon oregano, chopped. You can use dry if you don’t have fresh
  • 1 teaspoon sugar
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 2 cups canned diced tomatoes
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • 16 oz ground lamb
  • Pinch of ground cinnamon
  • 2 cloves garlic, minced
  • 1 cup yellow onion, chopped
  • 1/4 teaspoon ground allspice
  • 1 egg beaten
  • 6 wholewheat pita breads, toasted

    Directions:

    Soak bulgur in hot water for 30 minutes, drain and set aside.

    Add coriander seeds to the pen over medium heat and toast for 2 minutes. Transfer to spice grinder or mortar and process until powdered.

    Take 2 teaspoons of powdered coriander and mix with yogurt, parsley, scallions, mint, lemon zest, oregano, sugar, lemon juice and pepper. Cover and place in the refrigerator.

    In another bowl mix the olive oil, tomatoes and onion, set aside.

    Spray your broiler pan with oil .

    Combine the ground lamb with the remaining powdered coriander and the rest of the ingredients besides pita breads.

    Form 6 patties from the mixture and broil for 10 minutes turning once, or you can grill them on the grill.

    Fill pita breads with the burgers, tomato mixture and yogurt mixture.
